Quick Mexican Corn Risotto

 Are you looking for some new sides to accompany your summer grilling? This risotto is particularly great for using up leftover corn on the cob from last night. Give it a try along with salad and grilled pork tenderloin for an easy weeknight meal.
Note:  I didn’t have any red pepper on hand for the risotto above. Use what you have – steamed and chopped asparagus works great in this too!
