The chocolate in this recipe is actually hot cocoa poured over a batter. I know – it sounds wacky doesn’t it?When baked, the cocoa turns into rivers of rich chocolate sauce that is just heavenly over the dense, moist peanut butter base.
Chocolate Peanut Butter Casserole
Ingredients:
1/2 cup flour
1/4 cup sugar
3/4 teaspoon baking powder
1/3 cup milk
1 tablespoon vegetable oil
1 teaspoon vanilla extract
1/4 cup (4 tablespoons) peanut butter
1/3 cup semisweet chocolate chips
1/2 cup sugar
1/4 cup unsweetened cocoa
3/4 cup boiling water
Directions:
Preheat oven to 350.
Mix flour, 1/4 cup sugar and baking powder. Add milk, oil and vanilla extract and combine.
Add peanut butter and whisk until smooth.
Place casserole dish on a cookie sheet. Bake, uncovered, for 20 minutes. Batter will be slightly set. Using a knife, cut an X in the batter to allow the chocolate to run through batter. Return to oven for 20 more minutes or until toothpick inserted into cake portion comes out clean.
Spoon into serving dishes. Serve warm with a dollop of whipped cream or vanilla ice cream.
