Mangia Mondays:: Feta Avocado Salsa

It's time for Mangia Mondays, the weekly food blog hop I co-host with the lovely Kristin of Delightfully Dowling!

This salsa is so versatile and satisfying!!  Bring it to your next party with pita or tortilla chips, or serve yourself a fancy salad for lunch today.  You deserve fancy!

1 cup quartered grape tomatoes, or 2 diced plum tomatoes
1 ripe avocado, diced
1/4 cup diced red onion
1 clove garlic, minced
4 oz. feta cheese
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon fresh parsley, minced (cilantro may be substituted)
salt and pepper, to taste


Combine all ingredients.  Cover with plastic wrap, pressed directly on top of salsa, and chill until ready to serve.  Serve with crackers or chips as an appetizer, or over a bed or lettuce for lunch.  Or eat with a spoon while you stand in front of your open refrigerator.  I'll leave that up to you!
