Have you ever made rocky road bars? They are super easy and you can whip them up quick while dinner is in the oven.
Ingredients
1 stick (8 tablespoons) unsalted butter
1/2 cup unsweetened cocoa powder
1 cup packed light brown sugar
1 large egg
1/2 cup all purpose flour
1/2 cup milk
1 teaspoon vanilla extract
1 cup mini marshmallows
1 cup semisweet chocolate chips
1 cup coarsely chopped walnuts (optional)
Directions
Preheat oven to 350. Lightly butter or spray an 8″ square pan. Line with parchment paper, leaving overhang on two sides; butter or spray paper. Set aside.
In medium saucepan, melt butter and add cocoa until smooth. Remove from heat and add sugar, egg, flour, milk and vanilla.

Spread mixture into prepared pan. Bake until cake tester inserted into center comes out clean (25-30 minutes). Sprinkle top evenly with marshmallows, chocolate chips and nuts if desired (I did half nuts as you can see.)
Return to oven and bake until marshmallows puff, about 3 minutes.
We never get to this step, but if you or your kids can possibly wait….
Cool to room temperature on a wire rack. Refrigerate until top hardens (about 1 hour). Use paper overhang to lift from pan; cut into bars. Store at room temperature in an airtight container for up to five days.
If you can’t wait, let cool slightly and cut and serve while still warm and gooey! I highly recommend this version!
