Mangia Mondays:: Classic Blonde Brownies

Last Thursday Hannah graduated from elementary school.  One day we're at her Kindergarten Open House….
….and the next, she's off to middle school!

With two of my three munchkins officially out of school for the summer, and the third one out tomorrow, my job as Julie McCoy, Cruise Director officially commences.  First up on our list of summer fun is a beach day, and I'm putting my new elementary school graduate on baking duty today so we have some good snacks to bring with us.  One of her specialties:

You know Blonde Brownies - basically chocolate chip cookie dough baked in a brownie pan and cut into squares.  While there are many variations out there that include nuts, butterscotch chips and so on, I'm a classic Blonde Brownie lover myself and this recipe never fails!

Classic Blonde Brownies
Ingredients
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 teaspoon vanilla extract
3 large eggs
2 cups (12 oz. package) semi-sweet chocolate chips

Directions
Grease 13x9" pan.  Preheat oven to 350 degrees F.

Combine flour, baking powder and salt in small bowl.  In large mixing bowl, beat brown sugar, butter and vanilla extract until creamy.  Beat in eggs.  Gradually add flour mixture.  Stir in chocolate chips.

Bake for 25-30 minutes or until top is golden brown.

Cool completely in pan on wire rack, then cut into bars and enjoy!!

Congrats to your daughter for this milestone in her life! And I'm so impressed that she's the blondie baker in the house. Can I come along on the beach day?? :-)

Lisa, I so get it about our kids growing up so fast & time just going to fast, your family is just so sweet looking. I for sure that Julie has a lot of fun activities on the promenade deck in store for summer.

Yum! I am definitely making these. I have made blonde brownies with white chocolate chips, but never like this. Congratulations to your daughter, middle school is a huge milestone.

Hi Lisa! It sounds like you have a wonderful summer planned! I wish I lived closer to Boston! FUN! Congratulations on your graduate! My kids are going into their sophomore and senior year in HS!! I can't believe it, it was just the other day when we were walking 3 doors down to Kindergarten! Your Blondie Brownies look amazing! I have never tried one and have to try your recipe!!
