Chocolate Chip Banana Bread
1/2 c butter (1 stick), softened
1 c white sugar
2 large eggs
1 t vanilla
1 c mashed bananas (approximately 2)
1/2 c yogurt or buttermilk
2 c unsifted all-purpose flour
1 t baking soda
1/2 t salt
1 c chocolate chips
Preheat oven to 350. Grease loaf pan.
In large bowl, cream butter, sugar, eggs and vanilla until light and fluffy.
Add mashed bananas and yogurt
(I use whatever flavor yogurt I have on hand because I buy it by the tub.
You’d never know there was flavored yogurt (vanilla, strawberry) in the end result.)
Combine flour, baking soda and salt.
Gradually add flour mixture to wet ingredients, mixing just until smooth.
Stir in chocolate chips.
Spoon into prepared pan.
Bake 60 minutes or until tester inserted into middle comes out dry.

So what is your secret to get the banana bread to cook in the middle of the bread without keeping it too long in the over so the top gets burnt. That is ALWAYS my banana bread dilemma!!

Cover the top of your bread with tinfoil when it becomes golden and continue baking until the center is cooked through.
