The Best and Easiest Chocolate Cake Ever

Hi all! Hope you had a great weekend and a happy Mother’s Day if you are a mama!


I feel so blessed to not only have a mom and mom-in-law that love and support us, help us out with our kids all the time, and are a huge part of our lives, but to also be surrounded by friends, cousins, aunts and all you wonderful blogging mamas that I admire so very much.


We’re all doing our best to make a happy life for our families and I am inspired and encouraged by other mothers in my life who remind me by their actions to be grateful, have a sense of humor, love unconditionally, be our children’s biggest cheerleaders, take a deep breath, treasure each day, and oh – the hardest part – let our kids spread their wings.


I am so grateful for the gift of becoming a mom and having such incredible mothers in my life!


To celebrate Mother’s Day we had a nice family dinner last night after a busy weekend of kids’ sports, and ended it with this cake, which truly is the best and easiest chocolate cake I have ever come across! YEP – it’s based on a cake mix which I guess makes it semi-from scratch, but I promise you will love it.
This suped-up box cake is so moist and so delicious it doesn’t even need frosting! And the best thing about it is that it freezes beautifully. It’s best served warm, so if you plan to freeze the leftovers, slice it into pieces first, and when defrosting, simply microwave each frozen piece for about 30 seconds and voila! – it’s ready to serve! You can also make and freeze the whole cake (wrap it tightly with plastic wrap and then tinfoil) – it’s great to have on hand when you have unexpected guests!
