One of my biggest peeves is throwing food away. Ughghg! Don’t you hate that??
I buy beautiful, fresh, expensive produce and then sometimes before I can use it all, it starts to deteriorate in the fridge. When I notice I have a lot of veggies that need to get eaten asap, I whip up a batch of soup. A vegetable soup can be so nutritious {translate to mean you can have a cupcake for dessert!!}
Make this soup your own! Add whatever you like to change it up – it’s a great base or wonderful as is. Roasted peppers add a delicious flavor. Often I add baby spinach if I have a lot on hand. If you don’t have fresh basil, substitute with 1 teaspoon dried basil (as I did); if you only have regular chicken broth, don’t add salt but taste before serving and add salt & more pepper as needed. My husband is a big fan of adding Sriracha to this {and any other} soup for a little kick!
Hearty Tomato-Vegetable Soup

1/4 C olive oil
1 medium onion, chopped
1-2 carrots, peeled and chopped
2 cloves garlic, minced
1 28 oz. can Italian plum tomatoes
2 C low-salt chicken stock
1/4 C red wine
1/2 C chopped fresh basil leaves
kosher salt
freshly ground black pepper
1/4 grated Parmesan cheese
Heat oil in a large stock pot over medium heat. Add onion, carrots and garlic and cook until tender, about 10 minutes. Add tomatoes, chicken stock, wine, basil, 1/2 T salt and 1 t pepper. Bring to a boil then lower the heat and simmer for about 45 minutes.
With a ladle, scoop half the soup into a Cuisinart or blender, puree and return to stock pot. (If you prefer a less chunky soup you can puree the entire batch of soup, as I did in the photo above.) Add Parmesan cheese. Use a whisk to break up tomatoes in base and to combine with puree.
Serve with crusty bread or croutons for a healthy, hearty meal.

YUM! This looks like a great recipe Lisa. My family likes tomato soup and if I can sneak a few additional veggies in, all the better. I could eat a grilled cheese and tomato soup every day.
