Mangia Mondays:: Favorite Pinterest-Found Recipes

Thanks go joining me for another edition of Mangia Mondays, the weekly blog hop I co-host with my pal Kristin of Delightfully Dowling.
Today I'm sharing some of my favorite recipes that I found on Pinterest.

This weekend I made a chocolate chip banana cake.  I have made banana cakes in the past that were very dense, like banana bread.  While I LOVE and adore banana bread, I like a cake to be light and airy and moist, a good base to slather a yummy frosting all over, and this Chocolate Chip Banana Cake with cream cheese frosting from Baker's Royale was a winner!!  I made my own version of cream cheese frosting but it's very similar to the one in this recipe.
{I took inspiration from the post at Baker's Royale to split my two cake layers into four for a pretty presentation when sliced.  It's so easy to split the layers with a bread knife and if they don't come out perfectly even, the frosting disguises any imperfections.  Also, I frosted the sides of my four layers but the frosting is so sweet you could omit that step.}

I also made Ganache, the recipe hailing from Two Tarts, and poured it over the top of the cake, letting it ooze down the sides, for a little extra BAM!

I've made these Grape, Goat Cheese and Pecan appetizers a few times and they are the perfect pairing to a glass of wine.  {Unfortunately this photo has a broken link on Pinterest so I cannot locate or link to the original source.}

These appies are quick and easy to make:
Cut a log of goat cheese into bite-sized chunks. Form chunks into a balls by rolling between your palms.  Roll the balls in chopped pecans.  Use a toothpick to spear a red or green grape and a pecan-encrusted goat cheese ball.  Chill under ready to serve.

Closet Cooking's Jalapeno Popper Dip was a huge hit with our family!  The only change I make to the recipe is to omit pickled jalapenos and just use fresh.  You can moderate the heat from the jalapenos with the amount of seeds you add.

Any recipe I've tried by  ValSoCal has never disappointed me.
The combination of flavors is to die for.  Yum.  Insane.  I want it right now.

love having them all in one place.
One of my go-to's this summer
on my Foodie Favorites board
was pork fajitas with cherry salsa.
Now I'm using peaches instead
of cherries....so yummy! I also
got the idea to grill avocado halves.
If you like avos, be sure to try it.

I love trying recipes from Pinterest! I usually try a couple new ones each week.

I made this Spicy Zucchini Sausage Pasta last week and we both really liked it (and it was quick and easy to make).

I also love these Shredded Chicken Tacos. They are greasy, but delicious! They take awhile to cook up, but so worth it.

I've been dying to try that jalapeno popper dip. My neighbor just gave me some fresh jalapenos from her garden. I'd say that was a sign!
