Welcome to the first Mangia Monday of Twenty-Twelve!

2011 was the dawn of Mangia Mondays and wow - did all of you amaze us with your delicious recipes!  I tried many of them and learned some new kitchen tricks along the way.  If you've linked up a recipe along the way, thank you for participating and making this blog-hop so much fun!

To say goodbye to 2011 I thought I'd share with you some of the more popular recipes I posted this year.

Fish Tacos with Homemade Tortillas 
I was inspired to make these after Mark took me to California for my 40th.  {Oh to be in Laguna Niguel again - you Californians are so lucky with that weather!}

A Grandmother's Apple Pie
While I'm kind of spazzy with making the top crust look pretty, this was one deeelicious tasting pie.

Chocolate Peanut Butter Casserole 
I wish I could show you what this looks like, but my family inhales it as soon as it comes out of the oven!!!  This is a great dessert if you have a hankering for dessert but no eggs in the house!

My friend B showed us how to make this addictive dip that is made with cannelini beans - high in fiber, low in fat, and double the iron of beef.  A yummy snack despite the fact that it has nutritional value!

No kidding Lisa, I was just looking up homemade tortillas! I am going to try corn ones, I found a simple recipe, hopefully they will look as good as yours! I love fish tacos too! We had some on our honeymoon in Mexico and I have loved them every since, the dip looks so delish too!
