Mangia Mondays:: Chocolate Peanut Butter Casserole

Now, if you are seized by a hankering for chocolate and peanut butter, have I got a dessert for you.  The best part of this dessert is that it doesn't require eggs, so if you find yourself needing a sweet fix and you're out of eggs you can whip this up in no time.  It's also wonderful to serve to company.

The chocolate in this recipe is actually hot cocoa poured over a batter.  I know - it sounds wacky doesn't it?When baked, the cocoa turns into rivers of rich chocolate sauce that is just heavenly over the dense, moist peanut butter base.

Chocolate Peanut Butter Casserole

Ingredients:
1/2 cup flour
1/4 cup sugar
3/4 teaspoon baking powder
1/3 cup milk
1 tablespoon vegetable oil
1 teaspoon vanilla extract
1/4 cup (4 tablespoons) peanut butter
1/3 cup semisweet chocolate chips

1/2 cup sugar
1/4 cup unsweetened cocoa
3/4 cup boiling water

Directions:
Preheat oven to 350.
Mix flour, 1/4 cup sugar and baking powder.  Add milk, oil and vanilla extract and combine.
Add peanut butter and whisk until smooth.

Stir in chocolate chips with spoon.  Spread batter in ungreased 1-quart casserole dish.

In same mixing bowl, stir together 1/2 cup sugar and cocoa.  Add boiling water and combine, scraping batter from sides of bowl.  Pour cocoa mixture over batter in casserole dish.

Place casserole dish on a cookie sheet.  Bake, uncovered, for 20 minutes.  Batter will be slightly set.  Using a knife, cut an X in the batter to allow the chocolate to run through batter.  Return to oven for 20 more minutes or until toothpick inserted into cake portion comes out clean. 

Spoon into serving dishes.  Serve warm with a dollop of whipped cream or vanilla ice cream.
