Try these moist and rich chocolate cookies when baking for the holidays. They are little bites of gorgeousness!
4 oz. unsweetened chocolate
3/4 stick (6 tablespoons) unsalted butter, cut into pieces
2 cups semisweet chocolate chips
1/2 cup flour
2 tablespoons unsweetened cocoa powder (not Dutch process)
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup white sugar
3 large eggs
1 1/2 teaspoons vanilla
Melt unsweetened chocolate, butter and 1 cup semisweet chips at 30 second intervals in the microwave, stirring frequently, until smooth.
While the butter/chocolate mixture is cooling, trick your 12 year old and his buddy into eating a piece of unsweetened chocolate just for fun. Aaaaaah, the joys of motherhood!
Stir together flour, cocoa, baking powder and salt in small bowl.
Beat together sugar, eggs and vanilla until pale and frothy, about 2 minutes.
Mix in melted chocolate mixture, and then flour mixture until combined well. Stir in remaining chocolate chips. At this point your dough will be a loose consistency, kind of like those rivers of chocolate in Charlie & The Chocolate Factory. {Don't you want to dive right into this bowl of chocolate yumminess??}
Chill the dough, covered, for 2 hours.
After chilling, your dough will be firm like fudge.
Preheat oven to 350. Use a cookie scoop to form dough into 1 inch balls, or drop with a teaspoon, 2 inches apart on an ungreased cookie sheet. Bake in middle of oven until puffed and set, about 10 minutes. Cookies will be soft in center -caution! caution! - you do not want to overbake them! Transfer to cooling rack.
Hide a couple away for yourself because they go fast! {I just had one with my morning coffee - don't tell the kids.}
